Curator’s Notes:

Venice is a city of whispers.

Not grand declarations, but letters folded carefully, sealed with intention, written for one person and one person only. Casanova may be remembered for his reputation, but he was also a prolific writer — thousands of letters, personal and persuasive, where love lived in language.

That idea stayed with me.

What would a love letter taste like if it were written in flavour instead of ink?
What would it feel like if it unfolded slowly — layer by layer — rather than arriving all at once?

Casanova’s Love Letter is my answer to that question. A tribute not to excess, but to intention. A reminder that sometimes the quietest gestures carry the most meaning.

  • Cashew nut butter
  • White chocolatey spread
  • Tiramisu paste
  • Espresso powder
  • Roasted cocoa nibs
  • Finely chopped cantuccini almond biscuits
  • Milk chocolate infused with amaretto extract

Written in layers

Like any good letter, this one is built in layers.

It begins with my classic vanilla cake crumb — soft and familiar, the page on which everything else is written. A blend of tiramisu flavour pastes brings that unmistakable Italian character: creamy, gently bittersweet, balanced.

A chocolatey white spread echoes mascarpone’s smoothness, while neutral cashew nut butter binds and softens, keeping sweetness in check. Lightly toasted cocoa nibs add depth. Finely chopped cantuccini almond biscuits bring texture — that subtle crunch that makes you pause. A touch of espresso powder sharpens the edges just enough.

Everything is coated in milk chocolate compound infused with a delicate hint of amaretto extract — no alcohol, just a warm almond aroma that lingers.

Creamy. Layered. Intentionally balanced.

Interpretation: Casanova’s Love Letter doesn’t shout.

It unfolds.

Softness first. Then depth. Then a gentle bitterness that makes the sweetness more meaningful. Texture that keeps you present. A finish that stays with you.
